Dude! Who the hell are you? The article I just read was the best about the foodservice industry I have ever read. Only a Chef with real experience could have written that. I don’t know many Chefs that COULD have written that! I am 61, just getting out of the industry and pennyless! (And I’m trying to open a non-profit/non-tuition cooking school, trying to make even less money!) Anyway, I was very impressed and I am not easily impressed…whatever that means. Why did we do this to ourselves? Oh yeah, pride, women, drugs, and alcohol. Anyway, I think your writing and insight is brilliant.
